    Default Tarama Balls

    Cod roe (tarama) balls




    100g white cod roe
    8 spring onions, finely cut
    2 tablespoons dill, finely chopped
    1 tablespoon mint, finely chopped
    3 slices stale bread without crust, soaked and squeezed
    salt
    pepper
    plain flour for stir frying
    olive oil for stir frying


    1. Ina frying pan warm some olive oil and wilt the spring onions until they change colour. Add the dill, mint, salt and pepper and stir everything well.

    2. Combine this mixture with the bread and add the cod roe, rinsed in water. With clean hands scrunch and mix up well. Mould into balls and dust them with flour, shaking the excess away.

    3. Turn up the heat to full whack and stir-fry the cod roe balls. When ready (they should need about 2 minutes on each side to get golden brown) put them on a kitchen paper to drain. Serve them in a platter when still hot.
